According to Taste Atlas, a platform that acts as a global guide to traditional gastronomy, focusing on cataloging, rating, and ranking dishes and restaurants based on critics’ reviews and research articles, Puebla cuisine is considered laborious to prepare.

In 2024, the then president of Canirac Nacional, Puebla native Ignacio Alarcón Rodríguez Pacheco, told local media that he would do everything possible to secure Michelin-starred restaurants in the state.

Meanwhile, chefs like Eduardo Luna (of Valiente Kitchen Bar) have told the media that they hope for international recognition of the professionalism, quality, and traditions of Puebla’s recipes.
